Mon fichier app/config/parameters.ini a un parametre local en "en" mais si je le passe en "fr" sa change rien.

ne comprenant pas la première question je ne peut pas repondre au autre question qui en découle...

Par contre oui le format de date est important pour une question de lisibilité et de compréhensibilité par le visiteur.

t'as besoin d'Intl pour faire ça, si tu n'as pas lextension Symfony a du t'en avertir, sinon regarde dans ton phpinfo, savoir si une extension est installé ou pas fait partir des bases, je te conseil de bien connaitre PHP avant de lancer dans un projet ...

Cette extension est disponible pour PHP 5.2.0 dans PECL ou nativement pour PHP 5.3. Il y a donc 2 méthodes pour installer cette extension.

Intl doit donc être intaller puis que ma version php est 5.3.5

si t'as du avoir un warning, retourne voir dans ton config.php, visiblement tu n'as pas l'extension Intl d'installée (APC non plus au passage), si tu peux l'installer fait le, sinon tu ne pourras pas faire ça nativement

pour supprimer ta session il faut supprimer les cookies, ensuite tu doit bien mettre ta locale sur fr dans tas conf, vider le cache, la locale est mise lorsque la session ce créer et dépend de ton parameters.ini, donc si tout se passe bien ca doit marcher, au pire (vraiement au pire) dans ton controller fait un \Locale::setDefault('fr')
